4CupsFresh heirloom tomato, Cored and rough chopped
2CupPeeled and seeded cucumber
1CupRed Onion
2mediumGarlic Cloves
2TbspChopped Fresh Jalapeno
2TbspChopped Fresh Cilantro
1/4cupLime Juice
1/4CupOlive oil
2Tbspred Wine Vinegar
Salt and Pepper to taste
Instructions
Put all ingredients in a blender and puree until smooth. Serve with Sour cream, creme fraiche, or unsweetened greek yogurt. Or use a vegan substitute for the cream You could also garnish with fine diced cucumber and tomato.
