That’s right, folks! Today is the biggest day of the year for poultry lovers. It’s National Fried Chicken day! But, you don’t have to go to Kentucky to enjoy the crispy deliciousness of this southern delicacy. You can make it right in your own home. All you need is some buttermilk, spices, flour, and a neutral oil for frying. Serve it with some waffles and you are on to something. Or, you could make a fried chicken sundae. Maybe not. Sounds gross. But, a little maple syrup goes a long way. Then again, you could just eat it as is. It’s Finger lickin’ Time, with or without the bucket.

Southern Fried Chicken and Waffle bites with Bourbon maple syrup
We do everything from scratch for this recipe. But, there are a couple shortcuts. You can use a waffle mix if you want. But, that really only saves a couple quick steps. Bisquick and the like are just the dry ingredients of waffles. You still have to fold in eggs, milk, and butter. On the plus side, their blend is very consistent.
For the best results, marinate the chicken overnight. The enzymes in the buttermilk help tenderize the meat and allow the spices to penetrate. Feel free to make your own spice blend. There are plenty of mixes available. They provide consistency. But, beware. Many are loaded with salt. Because we want the other spices to speak for themselves, watch that sodium. Besides, it doesn’t help your health (neither does deep fried food. But, it’s fine in moderation).

Of course, you don’t have to do the waffles at all. But, It’s Finger lickin’ Time, and Chicken and waffles is the preferred way of serving. Of course, that’s the southern way. It is a little known fact that fried chicken was first introduced to the southern states by Scottish immigrants. But, the Scottish version had very little seasoning. Southern slaves brought African techniques of seasoning to the dish and what evolved is what we call southern fried chicken today. What a perfect American dish. It embodies how people of disparate backgrounds can work together to create something uniquely American and satisfying to all the senses. It’s Finger lickin’ Time.
