To celebrate mother’s day, we present: Edamame, Avocado, and Feta Salad. Edamame is a high protein bean that is very popular in Asian cooking and has become a staple in American households in recent years. Avocado has also become one of the most popular items in American kitchens. And, feta is cheese. Who doesn’t like cheese? If you are vegan, there are vegan versions. Being springtime, this salad evokes all the verdant feeling of the season. And, it celebrates the marriage of different cultures. We have south America, Asia, and Europe all represented in one dish.

The saltiness of the feta is a perfect combination with the sweetness of tomatoes and avocados. We use baby greens as a base to give bulk and height to the salad. The dressing is a simple citrus emulsion. The interplay of lemon or lime with avocado and edamame creates a vibrancy and freshness to make your tastebuds sing. Edamame, Avocado, and Feta Salad is a prefect brunch item. Or, you can serve it at anytime of the day.

If edamame isn’t your thing or it’s not available, substitute peas or fava beans. Or, you could leave them out entirely. Since this is for mother’s day, it’s really about what she wants. Edamame, Avocado, and Feta Salad

Ingredients
  

  • 1 cup shelled cooked edamame
  • 1 cup shave red onion
  • 1/2 cup baby tomatoes cut in 1/2
  • 1 cup diced fresh avocado
  • 4 cups baby greens
  • 1/2 cup cubed or crumbled feta cheese
  • For dressing:
  • 1/4 cup honey
  • 1/2 cup Lemon or lime juice
  • 1/2 cup White wine vinegar
  • 1 tsp dijon mustard
  • 1 cup avocado oil
  • Salt and Pepper to taste

Instructions
 

  • Make the dressing: Put all ingredients except oil in a blender. Turn on the blender and bring up to high speed. While it is running, add in the oil in a slow steady drizzle until it forms a nice emulsion.
  • Toss all ingredients in a bowl and coat evenly with dressing. You probably won't need all the dressing. Alternatively, assemble the salad so all ingredients can be seen and serve the dressing on the side.
