Yep! Today is national toasted marshmallow day. It’s time to Get your toasted marshmallow on! That means S’mores, hot chocolate, and a host of other presentations. Whether you are standing over a roaring campside fire or using a torch in an opulent dining room, marshmallows bubbled and browned are the order of the day.

What we think of as marshmallows is not what they originally were. There is a marshmallow plant: Althaea officinalis. It has white flours similar to hibiscus. As far back as 2,000 BCE people would boil the flowers with roots and honey until it thickened. The resulting marshmallow works for medicinal purposes such as colds, respiratory, and digestive issues.

But, the medicinal version is not our focus today. Today is all about sugar and gelatin. Most people never think of making their own marshmallows because they are so readily available and look like something created by alien technology. In reality, though, they are a pretty simple confection. The basic ingredients are gelatin, water, sugar, and corn syrup. Of course, we want to kick up the little fluff balls a notch. Simple vanilla flavoring isn’t enough. When we talk about toasted, what comes to mind? Tequila! Yep, that’s the ticket.

So, here is a recipe for Tequila Agave Marshmallows. These are vegan and gluten free. They are the perfect topper for a funky margarita. Follow our recipes here and you’ll be well toasted in no time. Get your toasted marshmallow on! But, Just beware of the stay puft marshmallow man! You never know with those crazy sailors in town.

Tequilla Agave Marshmallows

Ingredients
  

  • 1 Tbsp Agar Agar
  • 1 cup Agave Syrup
  • 1 cup water
  • 2 cups sugar
  • 1 tsp vanilla extract
  • 1/2 tsp corriander
  • 1/2 tsp Chili Powder
  • 1/4 tsp kosher salt
  • 1 oz tequilla
  • 1 cup powdered sugar
  • 1/4 cup corn starch

Instructions
 

  • Mix the cornstarch and powdered sugar. Dust a 9 inch baking pan with half of the powdered sugar mix.
  • In the bowl of a mixer, mix the agar agar in 1/2 cup water. In the meantime, Boil the remaining water, agave, and sugar until it reaches the soft ball stage (240 degrees). You can use a candy thermometer, or take a little of the syrup and drop it in a glass of water. If it forms a soft ball, it's there.
  • Whisk the agar in the mixer at low speed. Drizzle in the hot syrup until incorporated. Add the rest of the ingredients. Turn up the speed and continue whipping until frothy like a meringue.
  • Spread the mix evenly in the dusted pan. Dust the top with more powdered sugar mix. Refrigerate or set aside at least an hour until the marshmallows set up.
  • Once set, Cut the marshmallows with a knife dipped in water. Then spread them out on a sheet pan and put in an oven set on warm (150 to 170 degrees). Let them sit in oven about 10 minutes to dry them out a bit and create a bit of a crust. This step is optional. But, it helps with the consistency of the marshmallows. when done, Toss them in more powdered sugar.

Spicy Toasted margarita

Equipment

  • You will need a butane torch to toast the marshmallow

Ingredients
  

  • 8 oz Tequila
  • 4 oz Grand Marnier or triple sec
  • 8 oz Simple Syrup
  • 8 oz Lime Juice
  • 1/2 tsp Jalapeno
  • Lots of ice
  • 4 large Tequila agave marshmallows to garnish
  • Lime to garnish
  • A mixture of salt and sugar for rimming the glasses

Instructions
 

  • Put all ingredients except marshmallow and lime in a blender. Blend until the desired consistency.
  • Dip the Glasses in water and then dip into the sugar and salt mix to rim the glasses. Fill with margaritas. Then, Float the marshmallows on top. Use a torch to brown the marshmallows. Then garnish the drink with a lime wedge or round.
  • Drink and repeat.
